Homemade Oreos

I can’t even tell you how delicious these cookies are… I’m pretty sure that these are one of the best things I have ever made. If you got a chance to taste them, then you can attest to that. If not, they are super simple to make, and not at all as time consuming as they look! Let me know if you get a chance to make them (or have tried them) and what you think!!

Recipe adapted from smitten kitchen

Ingredients:
For cookies:

1 1/4 cups all-purpose flour
1/2 cup cocoa
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups sugar
1/2 cup plus 2 tablespoons (1 1/4 sticks) room-temperature, unsalted butter
1 large egg

For icing:

1/2 cup  room-temperature, unsalted butter (I used salted)*
2 cups sifted confectioners’ sugar
2 teaspoons  vanilla extract

*The original recipe calls for 1/4 cup unsalted butter and 1/4 cup vegetable shortening

Directions:

Preheat oven to 375 degrees. Mix flour, cocoa, baking soda, baking powder, salt, and sugar. Add the butter and then the egg. Mix well.
Place rounded teaspoons of batter on a parchment paper-lined baking sheet and slightly flatten the dough. Bake for about 9 minutes. Set aside to cool.
For the icing, combine butter and sugar, mixing at low speed (if you’re using an electric mixer). Add vanilla and mix until light and fluffy, about 2 to 3 minutes.
To assemble, using a pastry bag (I used a sandwich bag and cut off one of the corners, you can also just use whatever you have on hand, i.e. a spoon or a spreader), pipe teaspoon sized globs of icing onto the center of the cookies (I think I used a bit more than a teaspoon). Then place another same sized cookie on top and lightly press to spread the icing to the outsides of the cookies. Best served with a tall glass of milk (dunking is encouraged!).
