I can honestly say I am somewhat at a loss of words for these cookies. I’m trying to think of a strong enough adjective to do them justice (delicious, delectable, mouth-watering) and everything I come up with just seems to fall short of describing their amazingness. If there is one dessert that you need to make this season, (ok, or this weekend!) try these! I’ve received nothing but raving compliments about them and requests for more!

Ingredients:
For the cookies:
1 1/4 cup butter
1 cup brown sugar
1/2 cup sugar
1 large egg
1 tablespoon vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 1/2 cups quick oats (the original recipe calls for 3 but I think 2 1/2 was just enough)
For the icing:
1/2 cup butter
2 cups powdered sugar
2 tbs milk (the original recipe calls for whipping cream)
1 tsp vanilla
Directions:
For the cookies:
Preheat the oven to 350 degrees. Combine the butter and sugars in a large bowl and mix until creamy. Add the egg and vanilla and beat until mixture is light and fluffy.
In a separate bowl, mix together the flour, baking soda, salt, and cinnamon. Slowly add this to the butter mixture and mix until just combine. Add the oats and stir until just combined.
Place dough on a cookie sheet lined with parchment paper (I used a half tablespoon to measure out the dough). Bake for 10 minutes or until edges begin to turn a golden brown. Cool on a wire rack before icing.
For the icing:
Cream the butter and sugar together in a large mixing bowl, adding a little bit of powdered sugar at a time. Then add the milk and vanilla and mix on high until smooth and creamy, about 2 minutes.
For the pies:
Spread or pipe the icing onto one of the cookies (I used a sandwich bag and cut off one corner, much easier than spreading the icing, plus it goes on nicer). Then place a similar-sized cookie on top and gently work the icing towards the outer edges of the cookie.
