Fruit Pizza

I’m not usually a big fan of fruit for dessert but this was amazing! Maybe I liked it so much because of the cookie crust and cream cheese icing but it was delicious either way. My brother and Joe both tried it and loved it, too!

Recipe adapted from Paula Deen’s Fruit Pizza

Ingredients:
1 package store bought sugar cookie dough (or you can make your own if you prefer and have the time!)
8 ounces softened cream cheese
1 cup confectioners’ sugar
1 large peach, sliced (since peaches are not in season yet, I used a pear)
1 large green apple, sliced
1/2 pint fresh strawberries, sliced
6 ounces fresh blueberries (I just used whatever I judged was enough, really)
1/2 cup sliced red grapes
1/2 cup white chocolate chips, melted

additional options:
1 large orange, sectioned (now that I think about it, I have some mandarin oranges that I’m sure would have been delicious on this! Well, I guess that’s what happens when you make something at the last minute and don’t really plan it out!)
6 ounces fresh raspberries (I don’t like raspberries so I used red grapes instead)
1/2 cup chocolate syrup (I thought about melting some chocolate chips as well but I was too impatient to wait once I drizzled the white chocolate over the pizza!)

Directions:
Preheat oven to 350 degrees.

Flatten cookie dough onto a 6-inch pizza pan (if you don’t have a pizza pan, flatten or roll out the dough onto parchment paper and then transfer paper and dough to a baking sheet). Bake until firm to touch, about 11 to 15 minutes (I took mine out after 12 minutes and it was perfect!). Set aside to cool.

In a medium bowl, blend cream cheese and sugar. Spread the cream cheese mixture over the baked cookie and decorate with the sliced fruit. Drizzle the melted white chocolate over the pizza.

Slice and serve immediately.
