This is a great fall (or anytime, really) cake. It’s very heavy which makes it a really good comfort food cake and it’s prefect for breakfast with a hot cup of coffee or tea! This is one of my favorite cakes, and even though this one was delicious, I have to admit that my Grandmom still makes it better 🙂
Family recipe
Ingredients:
For the cake:
3 cups flour
3 teaspoons baking powder
2 cups sugar
1 cup vegetable oil
4 eggs
1/4 cup orange juice
2 1/2 teaspoons vanilla
6-8 peeled and thin sliced apples
For the cinnamon sugar mix:
2 teaspoons cinnamon
5 tablespoons sugar
Directions:
Preheat oven to 350 degrees.
Combine all ingredients except for the apples and cinnamon sugar mix in a large bowl. The batter will be very thick. Layer apples, cinnamon sugar mix, and batter in a greased bundt pan until the batter is gone.
Bake for 1 hour and 25 minutes.*
*I started checking at the 1 hour, 20 minute mark and I think I ended up over cooking it a little bit because I accidentally left it in for about another 10 minutes after that! That’s what I get for being so scatterbrained lately!
Have an amazing weekend everyone! Joe surprised me and took off today to spend the day with me as an early anniversary present… and even though the rain somewhat spoiled his plans of a carriage ride and day of walking around the city, I have to say I feel very lucky and am very grateful to have such a wonderful and thoughtful husband!
Enjoy!
