Artichoke Dip

This dip was delicious (and easy to make!)! I started out thinking I was going to use a recipe for hot spinach dip that I found on Pinterest, but I realized after I started making it that I didn’t quite have everything that it needed, plus, I had a few additional ingredients that I wanted to use! So, I used that recipe as I base and made up the rest as I went along… the end result was surprisingly tasty!

recipe (very) adapted from Martha Stewart’s hot spinach dip

Ingredients:

olive oil
1/4 to 1/2 cup milk
1/2 cup cream cheese
1/2 onion, chopped (I used a yellow onion)
2 cloves garlic, minced
a handful of mushrooms, chopped
a handful of artichokes, chopped
a handful of spinach, chopped
1 cup mozzarella cheese
2 dashes of hot sauce
2 dashes of Worcestershire sauce
coarse salt and pepper, to taste

Directions:

Preheat oven to 425 degrees. Heat oil in a dutch oven and add onions and garlic, cooking until lightly browned. Then add the mushrooms and artichokes, also allowing to slightly brown before adding the spinach  (I used a blend of kale, spinach, and arugula, but you can use whatever you have on hand). Add the cream cheese, stirring until melted, and then pour in the milk, stirring to combine. Mix in dashes of Worcestershire sauce and hot sauce and then add the cheese, salt, and pepper. Stir until smooth.

Transfer mixture to a glass baking dish and cover with remaining mozzarella cheese.

Bake for 20 to 25 minutes.
