Joe and I made these together over the weekend while listening to Jack Johnson 🙂 They were pretty simple to make and they were delicious! Added bonus: we had a blast cooking together (he enjoyed it because the recipe for pancakes isn’t exactly intimidating and he likes flipping them and pretending he’s a chef!)!

Ingredients:
1 1/2 cups flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
2 ripe bananas, mashed
Directions:
In a large bowl, sift together the flour, baking powder, salt, and sugar. Then make a well in the center and pour in the milk, egg, and melted butter and mix well, adding the mashed/chopped bananas last.
Heat a a light oiled (we used butter) frying pan or griddle over medium heat. Pour desired amount of batter into the pan (we poured the batter into a measuring cup with a spout which seemed to work really well). Brown on both sides and serve hot.
