Chocolate Chip Blondie

We were craving something sweet last night and while I had big plans to make something red velvet or Valentine’s Day themed to share with you guys, because of the snow I didn’t get out to get any extra ingredients that I needed. So, I settled for making these blondies… and I’m really glad I did! They were delicious!

Ingredients:
8 tablespoons (1 stick) unsalted butter, melted (I used salted), plus more for baking dish
1/2 cup packed light-brown sugar
1/3 cup sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup flour
1 teaspoon salt (I like sea salt)
1 cup semisweet chocolate chips
optional: 1 cup chopped walnuts

Directions:
Preheat oven to 350 degrees. Butter an 8 x 8 baking dish and/or line with parchment paper (if you line it with parchment paper, make sure to still butter the dish and even butter the paper a bit to avoid sticking).
Cream the butter and sugars together. Then add the egg and vanilla and mix to combine. Add the flour and salt and mix until just moistened; be careful not to over mix.
Fold in half of the chocolate chips and pour batter into baking dish. Sprinkle with the remaining chocolate chips.
Bake for 40 to 45 minutes or until golden brown on top (I took mine out at 40 minutes and maybe could have taken them out a few minutes earlier). Serve warm with vanilla ice cream!

Note: Store these in an airtight container at room temperature, up to 2 days
