Chocolate Chocolate Chip Muffins


These are the muffins that I made the other day instead of making my homemade soup… I have to say they were a pretty good alternative. Not too chocolately, not too sweet (which was good because I used milk chocolate chips instead of semisweet… as usual…)!

Recipe courtesy of Nigella Lawson on the Food Network, makes 12 muffins

Ingredients:
1 3/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons good quality cocoa powder
3/4 cups superfine sugar (I just used regular granualted sugar)
3/4 cups semisweet chocolate chips plus 1/4 cup for sprinkling (I used milk chocolate chips and added some Reese’s peanut butter chips… I love chocolate and peanut butter!)
1 cup milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon vanilla extract

Directions:
Preheat the oven to 400 degrees and line muffin tins with paper cups.
Combine the flour, baking powder, baking soda, sugar, and a 3/4 cup of chocolate chips (or in my case, chocolate chips and peanut butter chips) in a large bowl. In a separate bowl, mix the wet ingredients and add to the dry ingredients. Take care not to over mix… lumpy batter makes the best muffins! Spoon into muffin cups and sprinkle the remaining chips on top. Bake for 15-16 minutes or until muffins are risen and springy (the recipe says to bake for 20 minutes but I took mine out after 16 minutes and they probably could have come out after 15… just a little too dry for my liking).

In case you haven’t noticed, I love muffins 🙂 They’re great for breakfast, perfect for an on the go snack, and even lovely with a cup of tea at night (and they keep well, which is great for me since it’s only me and Joe). I’m always looking for new recipes to try so let me know if you have any suggestions! There’s a recipe I found on Pinterest for banana and green tea with chocolate chunk muffins that I’m dying to try! Just add that to the impossibly long list of baked goods and other recipes that I want to make… there just aren’t enough hours in the day!
