Chocolate Chunk Cookies with Sea Salt

I know I’ve shared my recipe for chocolate chip cookies before (remember this one?) but this is unlike any chocolate chip cookie recipe I’ve ever made! Aside from the additional ingredients, they seemed to stay fresher longer… they stayed soft as opposed to getting harder as the days pass. And since there is only two of us here, that is a really good thing! These were delicious!!

Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt (I used sea salt)
1/4 teaspoon baking soda
1/2 cup (1 stick) unsalted butter, room temperature (I used salted)
3/4 cup light brown sugar, packed
1/2 cup sugar
1/4 cup powdered sugar
2 large egg yolks
1 large egg
1 teaspoon vanilla extract
8 ounces semisweet or bittersweet chocolate, coarsely chopped (I used semisweet chocolate chips)
sea salt for sprinkling

Directions:
Preheat oven to 375 degrees.
Mix flour, baking powder, salt, and baking soda together in a medium bowl and set aside.
Using an electric mixer, beat butter, sugar, brown sugar, and powdered sugar on medium speed until light and fluffy, about 3 to 4 minutes (if I hadn’t just gotten my KitchenAid, I honestly probably would have done this by hand… sometimes I just love baking the old fashioned way!). Add egg yolks, egg, and vanilla. Mix well, occasionally scraping down the sides of the bowl, until mixture is pale and fluffy, about 4 to 5 minutes. Reduce mixer speed to low and slowly add the dry ingredients, mixing just to combine. Fold in the chocolate chips using a spatula.
Spoon rounded tablespoonfuls of the batter onto parchment paper-lined baking sheets, spacing cookies about 1 inch apart. Sprinkle cookies with sea salt.
Bake cookies until just golden brown around the edges, about 10 to 12 minutes (I always err on the shorter time as you can always put them back in but you can’t do anything about it once they’re over cooked!). The cookies will firm up as they cool. Allow to cool slightly on baking sheets, then transfer to wire racks to cool completely (unless you want to serve some warm, which are the best in my humble opinion!!).

I’m really excited it’s Friday! We have a lot to get done around the house this weekend, since my best laid plans during the week somehow always seem to fall though, but I don’t mind 🙂 I actually enjoy doing housework, especially when it doesn’t have to be rushed and even more so when it’s sunny outside and I can have the windows open, but it’s still a few months too soon for that.
