Easy Chocolate Chip Cookie S’mores

Ok, so I definitely cheated a bit in this recipe by using already made cookie dough, but, it was perfect for a quick and easy after dinner dessert! Also, as an aside, can I tell you that I’m a little annoyed that this baking sheet is brand new and already looks like this?!

Ingredients:
Chocolate chip cookie dough (see my recipe here, or use store bought cookie dough)
Graham crackers, broken into smaller pieces (I only used half of the roll of cookie dough so I used about 4 graham crackers, double it for the whole roll or for my recipe… there is no correct amount, use what you want!)
Milk chocolate bars (use one piece for each sandwich, it will be enough since you already have chocolate chips in the cookies)
Large marshmallows (one for each sandwich)

Directions:
Preheat oven according to baking directions (350 degrees for Pillsbury cookie dough, 375 for mine). Mix cookie dough and graham cracker pieces together in a bowl until combined. Drop by tablespoon on an ungreased cookie sheet (Using half of the cookie dough roll, I made 12 cookies). Bake according to directions on package.
Remove from oven and allow to cool for a minutue before removing to a separate plate or cooling rack. Then place marshmallows on same cookie sheet and put in the oven for about a minute or two, watching closely (the idea is to warm them up a bit, not melt them completely). Turn half of the cookies upside down and place individual chocolate bars on top. Remove marshmallows from the oven and place on top of chocolate. Top with remaining cookie and press down a bit to crush the marshmallow and melt the chocolate.

These were a last minute dessert idea the other night and were absolutely delicious! The only caveat I have is to only make as many s’mores as you think will be consumed as the cookies will keep better by themselves. Seriously, using the pre-made cookie dough, this recipe may have taken me 15 to 20 minutes from start to finish! Perfect for the summer when you don’t want to be slaving over the oven all night!
