While oatmeal chocolate chip cookies have never been on my top ten list for desserts (though this recipe was definitely a game changer!), they are one of Joe’s favorite cookies. So, being the obliging wife that we all know I am ;), I made these for him last night and they were delicious! Let me know what you think! I think they would also be really good minus the chocolate chips and with the raisins, walnuts, and cinnamon!
Recipe adapted from McCann’s Imported Irish Oatmeal
Ingredients:
1 cup (softened butter)
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 egg, slightly beaten
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon salt
2 1/2 cups quick cooking oatmeal
2 cups chocolate chips (I used semi-sweet)
optional (I opted to use chocolate chips instead of the below ingredients):
3/4 cup raisins
1/2 cup chopped walnuts
1 teaspoon cinnamon
Directions:
Preheat oven to 350 degrees.
In a large bowl, cream the butter and sugars. Add the egg and vanilla extract and mix. In a separate bowl, stir together the flour, baking soda, and salt. Slowly add to the butter mixture and mix well. Stir in the oatmeal and chocolate chips until well combined.
Use a spoon to form batter and drop onto an ungreased cookie sheet.
Bake for 12-15 minutes and allow to cool for one minute before removing to a wire rack.
