Ingredients:
kale (leaves only, rinsed and dried)*
olive oil
salt
garlic powder (or vinegar or other desired herbs to use for flavoring)
parchment paper
Directions:
Preheat oven to 200 degrees.
Put kale in a large Ziploc bag and add 1/2 teaspoon olive oil. Seal bag and shake to coat well. Add another 1/2 teaspoon of olive oil and shake again to coat evenly. Spread kale in a single layer on a baking sheet covered with parchment paper (I didn’t use it because I didn’t have it when I made these).
Bake for about 35 minutes, checking every 10 minutes to turn. Remove kale chips from oven and sprinkle with seat salt and desired seasoning.
Store in a plastic bag.
*In the first photo, you can see how I separated the leaves from the tough, thick stems. Where the stems were thinner, I just left the leaves attached.
I’ve been meaning to make these for a while now and just haven’t had the time so I was really excited the other night when I had an hour of free time after work 🙂 It’s been so busy around here that I feel like all I’ve been doing lately is playing catch up. I’ve been trying to focus on living in the moment (or at least somewhat in the present rather than worrying about 6 months from now… yes, that is what I usually do) but I always have trouble with that when it gets busy because I start stressing about not having time to enjoy doing just that! It especially hit me last night when my younger sister asked me why I haven’t been baking lately (I haven’t baked anything in weeks). So, now I’m vowing to set time aside each week for the things that I enjoy rather than waiting for everything to slow down, because we all know that something is always going to come up to swallow your free time!
